Nose: Quite leathery, with dark fruits. More fruit than peat, but with an appealing coastal, mineral backbone.
Palate: Very clean and coastal. Salt-preserved lemons. A smoky tangine laced with rich, aged balsamic vinegar, brown sauce and tamarind.
Finish: Long and fairly salty. The dried fruits of the nose make a welcome return. The peat comes over as a distant kiln chimney. Overall rich and balanced.

Tasting Notes
Colour: Full Gold
Nose: Big, Punchy sherry notes. Antique wax polished mahogany wood furniture. A touch of salty sea air. Some fruity notes underneath, strawberries dipped in chocolate, Pears studded with cloves poached in red wine.
Palate: Initially soft and gentle, but then every thing kicks off with a bang. Pipe smoke, rich sherry, lashings of fruit, sun-dried Muscat grapes, dark plums. Very concentrated and rich, oily on the palate.
Finish: Great length. The rich fruity sweetness continues. The peat fades away gently. Very rich and intense. A cracker of a cask

Tasting Notes
Nose: Elegant and leafy. A damp forest floor. Soft, sweet pipe tobacco and dark chocolate covered fruits. Some hints of fresh leather, balanced by a gentle mineral and maritime note. Intriguing and enticing.
Palate: Thick, full and mouth coating. Note over sweet, but not bitter. Meaty with some spice, peppery pencil shavings. The fruits of the palate are a little darker with figs and prunes. The chocolate of the nose shades to milky coffee. all very elegant and refined.
Finish: Good length. The earthiness remains with just a whiff of grass smoke and soot. The spicy initial attack on the palate and is replaced by a warmer honey tone. Clean and well balanced, a very rewarding dram.

To great delight, the spirit that resulted from this method of maturation demonstrated a depth of quality missing from a larger cask over a similar period of storage. It had become smoother, more balanced and was bursting with character, With its rough edges removed, the taste profile was changed dramatically, becoming akin to a whisky of a much more mature nature or vintage. It was polished, bright and sparkling with intensity.

After Octavation: Plums, creamy toffee, figgy, sweet sherry, toasted oak.
